May is So Delicious SO MUCH TO LOVE Month! What does that mean? So Delicious is having a weekly contest with each week themed Breakfast, Lunch, Dinner, Snack/Dessert. My recipes are finalists in three categories and I will post them as they are ready for voting!

This week’s theme is BREAKFAST and the “I LOVE ME” SMOOTHIE is featured! Just in time for the warm spring weather! Really, I’m not sure if this should be under dessert. Its so yummy and creamy. I feel like I’m cheating at breakfast.

Serves 2
1 ripe banana (frozen is best)
1 ripe pear or 1 red apple, sliced
1 1/2 cups So Delicious Almond Plus or Vanilla Coconut Milk
2 heaping tablespoons almond butter
1 very large kale leaf or 2 medium kale leaves (stems removed)
4 ice cubes
Optional: 2 tablespoons chia seeds

Place all ingredients in a blender, blend until smooth. Pour into two tall glasses. If using,
stir in 1 tablespoon chia seeds per glass. Enjoy!

This recipe is GF, vegan, soy-free.
