Ah, just in time for Memorial Day weekend! Your new favorite veggie burger – packed with as much umami as I can think of and so worth the gamut of ingredients (make a double, triple batch — the whole summer is ahead of us!)

And right with it, the best mayo (and an added umami boost).

Miso Mayo

3 Tbsp. Vegenaise
1 Tbsp. Mellow White Miso
1/2 tsp. lemon (optional)
pinch of sugar (optional)
pinch of salt and pepper

Mix all together and use as spread for sandwiches.

    Looks really good! But the link to the burger recipe isn’t there. Maybe it’s not up yet? Sorry to rush you- that veggie burger looks SOOO GOOOOOOD. It needs to end up in my belly, pronto.

    Thanks these were lovely, we used buckwheat flour instead of chickpea flour (we didn’t have any) and added rehydrated and sautéed shitake mushrooms and switched around a few other ingredients like smoked salt and smoked paprika to make up for having no liquid smoke. Regardless of all the substitutes we ended up having to make because we were desperate for them, I just wanted to say thank you as an ex-vegan (no gluten, no soy now due to allergies), I enjoyed being able to go back to it, even for a moment.

      So great to hear that Jenn! And with my recipes, I truly don’t want to preach to the proverbial choir. I want to give people great options to ADD more vegetables to their diets and maybe, from time to time, take a break from the “usual” sources of protein.

      And to speak to your allergies, most of my recipes strive to be GF (I have sensitivities as well!) — I’m also an advocate of encouraging people to try the wealth of grains we have out there. Its truly an adventure!
