As you can see that is a picture of my 5-year old son, juicing. Now, this is not some staged photo-op. He asks to juice. He loves it. Granted, his Green Lemonade is less green than orange, although, everyday his tolerance for the “green part” grows (as I write this the kids’ carrot juice to date is a not-so-brilliant orange but closer to a murky, less photogenic, brown – but hey they drink it.)
This is our basic recipe for Green Lemonade — we have this about 3 to 4 times a week. This is the other half of our “Breakfast of Champions.” (more on that later) This is not your typical recipe because the quantities for the greens vary with what’s on hand as they have varying liquid content. My 3-year old drinks this as well but prefers Green Smoothies (recipe soon).
Green Lemonade
Basic
1 apple
1 lemon, peeled with a parer or peeler so that the rind is removed but the white pith remains (great source of bioflavonoids)
1 celery stalk
1 good bunch of parsley
4-5 leaves romaine
3-4 leaves kale
a bunch of spinach
1 inch of ginger
3 or 4 large carrots
For the kids, I add an orange, peeled the same way as the lemon and lessen the greens so that the color is still “acceptable.” I vary the greens with what’s on hand but always add parsley, celery and ginger. I love it with cucumber too.
Place in juicer and enjoy!
