Caramel Sauce

Could it be true? A vegan AND paleo-friendly* caramel sauce? Move over olive branch, I think this may bring peace on Earth.

When I was growing up, my grandmother used to make a caramel sauce to go with handmade rice cakes wrapped in banana leaves. How can I have forgotten about it? I always thought it would be an arduous task with lots and lots of stirring. But really, its not.

All you need is a 1 to 1 ratio of coconut milk (not light) and coconut sugar (you can get it at Trader Joe’s, Whole Foods, the co-op, sometimes Asian stores). Maybe a dab of vanilla extract but its not required.

Mix and stir over medium heat and bring to a boil. I am not one to trifle with thermometers so I just let it boil gently for about 5 minutes then I simmered it for an equal amount of time. Remove from heat. It will seem very liquid when you take it off heat but as it cools, it will thicken.

Its everything I remembered it to be and more. So simple. So rich. Just gorgeous. Liquid gold. So easy to whip up, I always have some on hand. How can I have lived without it for so long?

*In strict Paleo diets, sweeteners of any kind are discouraged. This is for when you want to bend the rules a little :)
