Its that season! This arctic cold and the illnesses going around is pushing me to support my immune system with some nutrition-packed vegetables. One of the easiest ways to boost your immunity is to actually gently “cleanse” with vegetables that naturally detoxify. Coupled with a whole foods-based diet, this is a great way to get extra protection from the winter bugs and blues.
Beets are one of natures great detoxifiers and this root vegetable is easily accessible right now in grocery stores.
I love to juice heartbeets and prepare them simply by roasting them. Roasting brings out their natural sweetness.
Here are my favorite recipes for juicing and a simple heartbeets salad.
The secret to juicing? Rinse your juicer right after you use it. Otherwise it’s a b**ch and you will never juice again. The second secret is not to sweat the combinations. A green apple will go a long way in terms of making your juice delicious. Find a few combos that you like and keep it simple.
Cleansing Beet Juice
3 small heartbeets
1 whole medium cucumber
1 peeeled lemon (just peel the rind, leave the pith)
a half of a bunch of parsley
a small piece of ginger
This juice is cleansing and absolutely refreshing.
Beet and Avocado Salad
One to Two Servings
1 whole avocado, diced or sliced
About 2-3 cups diced beets
1 cup finely chopped red onion
and this sharp vinaigrette:
Apple Cider Vinaigrette
1/3 cup raw apple cider
¼ cup olive oil
½ tsp grainy mustard
salt and pepper to taste
